Spicy Lime Avocado Fries
Who doesn’t like fries? Who doesn’t like avocados? The perfect marriage of the two is right here: avocado fries.
These are dope because they’re crispy yet smooth, crunchy yet creamy. Not to mention easy. Make some to pair with chili, soup or a lettuce-wrapped burger sitch. And, maybe the best hack with these, you can have the healthy avocado but ditch the chips. Plenty of crunch here already.
Here’s how to make it:
- 1 (not quite ripe) avocado
- brown rice or coconut flour
- 2 eggs, beaten
- gluten free japanese style breadcrumbs
- paprika, chili powder, salt, pepper
- lime wedges
Preheat oven to 400 degrees.
Cut the avocado into 1/8-1/4 inch slices. (The avocado should be almost ripe but sturdy enough where you can slice it and it holds its shape for dredging.)
Set up your dredging stations: brown rice flour (#1), egg (#2), breadcrumbs with paprika, chili powder, s + p (#3).
Dredge the avo slice through each station. Make sure everything is well coated but not lumpy. Place on a baking sheet.
Bake for 10-12 minutes or until golden brown and crispy. Squeeze lime juice over the top and garnish with lime. Serve with a spicy sauce like a low sodium hot sauce or salsa. You could also use regular old ketchup, but go for Paleochef which has no processed sugar or high fructose corn syrup.
